I have a serious addiction to all things Harry Potter.

It began in 1999 when the first Time magazine article about the worldwide phenomena came out. I bought the first two books and I was gone… hook, line and sinker.

I read thebooksto my newlywed husband on our honeymoon, I bought the audio books to listen to on car trips, I went to the first movie while on vacation for a friends’ wedding, I listened to Hedwig’s Overture on repeatwhen I had pregnancy induced insomnia, I stayed up all night reading newly released books while nursing my babies.

I was an addict, and then I carefully tuned my kids into addicts.

I read them each of the books, I dressed them as Harry and Hermione for Halloween, I threw them Harry Potter birthday parties, and we visited the touring display of movie props. (We even have asubscription to the Wizarding World Loot Crate,a box of Harry Potter Goodies delivered to your mailbox.)

And now, after nearly 11 years of waiting, the time has come…

We are heading to the Wizarding World of Harry Potter at Universal Orlando.

I might cry with happiness.

Wizarding World Activities

I cannot wait for all the Wizarding fun to begin. I want to ride the Hogwarts express, eat at the Leaky Cauldron, shop for wands at Ollivanders, buy pranks at Weasleys’ Wizard Wheezes, and drink Butterbeer in Hogsmeade.

… and my kids probably want to do that stuff too.

It will be in Wizarding World heaven.

Spreading the Harry Potter Love

I don’t want to be a greedy, there is enough Harry Potter for everyone! To let you in on the HP fun (without having to travel) I’m sharing this delicious recipe for healthy Butterbeer smoothies (while I’m enjoying the not-so-healthy Hogsmeade version).

At our HP birthday parties, we made Buttebeer with cream soda and butterscotch, whipped cream and caramel. It was tasty but sooooooo sweet and full of refined WHITE SUGAR.

To make this smoothie, I tried to recreate the flavor of the Butterbeer latte recipe from Practically Functional. (Jessi’s warm Butterbeer version is so delicious my kids request it more than cocoa in the winter.)

The result isa tasty smoothie that has no refined sugar, no artificial coloring, and it’s vegan! It’s the perfect summer treat for healthy kids (and ADULTS) who love Harry Potter.

Vegan Caramel Sauce

The key to the perfect Butterbeer smoothie is making a vegan caramel sauce with dates and cashews. It is creamy and delicious without sugar. Do you see that creamy dreamy deliciousness above? Who knew fruit and nuts could mimic dairy and sugar so convincingly?

This caramel sauce also tastes great as a fruit dip…or eaten with a spoon…or licked off your finger (just sayin’).

TheButterbeer Smoothie Recipe

This is a straightforward smoothie recipe, just toss and blend. If you whip the caramel sauce up a day ahead of time it gets extra smooth and creamy. Then you can easily enjoy caramelicious Butterbeer smoothies for a whole week!

You can use almond, cashew or coconut milk in this recipe or, if you have no dietary restrictions, plain old cows milk. Butterbeer smoothies do not discriminate!

Description

Make a homemade Harry Potter Butterbeer Smoothie and feel the magic! This easy smoothie recipe tastes like the Butterbeer sold at Hogsmeade in the Wizarding World of Harry Potter but it contains no sugar and it’s vegan.

Ingredients

Vegan Caramel Sauce

  • 1 cup dates
  • ¼ cup cashews (roasted or raw)
  • 1 cup almond milk
  • 1.5 tsp vanilla extract
  • ¼ tsp sea salt

Butterbeer Smoothie

  • 1/3 cup almond milk
  • 1/31/2 cup frozen banana (about ½ of large banana)
  • ¾ tsp vanilla
  • 1/16 tsp ground cinnamon
  • 2 tbsp vegan caramel sauce
  • 2 ice cubes (water or frozen almond milk)

Instructions

Vegan Caramel Sauce

  1. Place dates and cashews in a bowl or large Mason jar. Cover with 1 cup of hot (nearly boiling) water and allow to sit for 1 hour-overnight to soften.
  2. Drain dates and cashews well.
  3. Blend together dates, cashews, almond milk, vanilla, and salt until smooth and creamy.
  4. Refrigerate caramel sauce until you are ready to make smoothies.

Butterbeer Smoothie

  1. Combine all ingredients in blender and process until smooth.
  2. Pour 2 tbsp caramel sauce down the sides of a glass and top with smoothie mixture.
  3. Enjoy!
